By the way, my husband didn't technically "leave me" leave me. We are moving home to New Orleans soon and he had a job opportunity that he needed to take in New Orleans before I could leave D.C. So I am living alone and cooking for one, but I am not exactly single ;-)
Hush Puppies
Adapted from Cooking Light April 2010
Ingredients
- 4 cups of Peanut Oil
- 3/4 cup all-purpose flour
- 1/3 cup cornmeal
- 1/3 cup buttermilk
- 3 tablespoons grated onion
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1 large egg, lightly beaten
Preparation
1. To prepare hush puppies, heat 4 cups of peanut oil to 385 degrees in a dutch oven. Lightly spoon 3/4 cup flour in dry measuring cups; level with a knife.
2. Combine 3/4 cup of flour and remaining ingredients in a large mixing bowl.
Mix ingredients together until incorporated.
3. Drop batter 1 tablespoonful at a time into pan; fry at 375° for 5 minutes or until browned, turning frequently.
Remove hush puppies from pan using a slotted spoon; drain on paper towels.
Serve hot with butter.

I am so happy for you that ya'll are returning home! Missing home...The Big Easy myself, but I will only return for visits. Pretty entrenched in North Cackalacky now...! Those hush puppies look great. I have to say, I eat alone a lot. My hubby works very strange hous and I often cant be bothered to make something fab and dirty up the kitchen just for me. I eat a lot of frozen food (ridiculous for a food blogger). I like what you did here. Great post.

my husband moved to chattanooga 7.5 weeks ago for a job while i stay in charlotte to sell our house. it is tough and it definitely changes how you cook. cooking for one has been a challenge for me + you don't get to share your meal. hope your move/transition goes well.
Congratulations on the upcoming move! My hubby had to be away from me 5 months before our house sold. During that time I endured Hurricane Rita by myself. :( It's all worth it in the end--good luck!

Whew! You had me going there for a minute...thought your husband left you left you. glad that's not the case!! You are so better than me for cooking when your husband's out of town. For me it's sandwiches, wraps, ceral etc when he's gone.

OMG. I was freaking out for a minute...actually had to go back cause I stopped reading and was going to just leave a comment. That's when I found out your husband hadn't actually left you. My wife's aunt and best friend has, in the past two years, just gone through that situation and I was freaking out. I check your blog at least every other day and love your recipes. I have never had hushpuppies with butter before. Actually the other day when I ordered them, the waitress asked if I wanted butter to go along with them. But since I normally eat hushpuppies when I go to a seafood place, I have to dip them in tartar sauce. But sometimes honey mustard is good with hushpuppies to. Can't wait to see the inspirational recipes from New Orleans. I definitely miss the fresh ingredients from New Orleans.
